Toffee Squares

Ingredients:
1 cup butter
1 cup brown sugar
1 egg yolk
2 tsp vanilla
1 3/4 cup + 2 Tbsp flour
6 x 45g Jersey Milk chocolate bars

Directions:
1. Cream together butter and sugar.
2. Add egg yolk and vanilla and mix well.
3. Gradually beat in flout and knead well.
4. Spread batter on cookie sheet to form a rectangle.
5. Bake at 350 F for 15 mintues. Pastry should be light brown and puffy.
6. Remove from oven and place chocolate bars on hot pastry; let chocolate melt for 5 minutes then spread.

Banana Bread Brownies

Ingredients:
1 1/2 cups sugar
1 cup sour cream
1/2 cup butter, softened
2 eggs
3 bananas, mashed
2 tsp vanilla
2 cups flour
1 tsp baking soda
3/4 tsp salt
1/2 cup walnuts

Directions:
Preheat oven to 375. Cream together sugar, sour cream, butter and eggs until smooth. Add remaining ingredients and mix. Pour batter into greased 9x13 pan. Bake for 20-25 minutes or until knife inserted in middle of pan comes out clean. Allow to cool on rack but frost with icing while still warm.

Butter Icing:
1/2 cup butter
4 cups icing sugar
1 1/2 tsp vanilla
3 Tbsp milk

Measure all ingredients in large bowl. Beat slowly until all moistened. Add more milk or icing sugar as needed to make correct consistency.

Applesauce Cheesecake Bars

Ingredients:
Crust:
1 cup flour
1/4 cup brown sugar
1/2 cup butter, room temperature

Cheesecake Filling:
12 oz cream cheese, room temperature
1/3 cup sugar
1 egg
1 tsp vanilla

Apple Layer:
1 cup applesauce (pre-made with honey/maple syrup, cinnamon and nutmeg)

Streusel Topping:

1/2 cup brown sugar
1/2 cup flour
1/4 cup rolled oats
1/4 tsp cinnamon
1/4 cup butter, room temperature

Directions:
1. Preheat oven to 350° F. 

2. In a medium bowl, whisk together flour and brown sugar. Add the butter and use a pastry blender (or two forks) to cut butter into mixture until crumbly. Press mixture evenly into 8x8 pan. Bake 12 to 14 minutes or until light golden in color.

3. In a large bowl, beat together cream cheese and 1/3 cup sugar using an electric mixer at medium speed until creamy and smooth, about 1 minute. Then add egg and vanilla. Beat to combine. Pour over warm crust.

4. Pour applesauce evenly over cheesecake mixture.

5. In a small bowl, combine brown sugar, flour, oats, cinnamon and butter. Either stir ingredients together using a wooden spoon or, better yet, use your clean hands to combine the butter into the mixture.

6. Sprinkle streusel topping evenly over the apple layer. Bake 35-40 minutes, or until streusel is light brown and filling is set. Let bars cool in the pan to room temperature, then transfer to refrigerator to chill for at least 3 hours. Serve cold and enjoy!
